Sugar free fruit cake

This recipe from Hillside Animal Sanctuary is great for those avoiding refined sugar, and is also low fat.

  • 1lb (450g) mixed dried fruit
  • 4oz (115g) chopped dried dates
  • 4oz (115g) chopped dried apricots
  • 3/4 pint (430 ml) water
  • 2 tbsp orange juice
  • 6oz (170g) wholemeal self-raising flour
  • 2oz (55g) ground almonds
  • 2 tsp mixed spice
  • rind of organic or unwaxed lemon or orange
  1. Soak the dried fruit in the liquid overnight.
  2. Pre-heat the oven to 160C/Gas 3.
  3. Grease, or line with greaseproof paper, a 9” cake tin.
  4. Add remaining ingredients to the soaked fruit. Mix thoroughly.
  5. Put mixture into the baking tin and bake for approximately 1 and a half hours, covering with greaseproof paper for the last hour.
